Corn Pancake with Smoked Salmon, Miniature Zucchini, Creme Fraiche and Dill |
I was really skeptical about this dish... buying a canned grain (a popular myth, but no corn is not a vegetable) was such an anti-foodie experience. I didn't realize what a food snob I've become. My 10 year old explained to me that Dorie probably uses canned corn because it is so moist. I think she is right. The batter came out very creamy. The pancakes cooked up nicely: crisp and light.
I served them with smoked salmon, thinly sliced miniature zucchini, topped with creme fraiche and dill... WOW, these were delicious. Though after my 4th one my stomach felt like I had swallowed a brick. I realized that these pancakes served this way are probably best as an appetizer.
My family and I brainstormed ideas for toppings...my daughter really wanted to have them as a dessert. She covered a leftover pancake with strawberries and whipped cream, pretty good. She also thought that they might be nice filled with cinnamon sugar and cream....maybe? but I see them as being more as a savory dish.
I can see ladling a ratatouille with sausage over them or maybe a Southwest dish: some black beans mixed with lime and cilantro and topped with sour cream...
What are your ideas for toppings I would love to hear them...???

ReplyDeleteAs a member of "French Friday's with Dorie" we are not allowed to give out the recipes from the cookbook, "Around My French Table" but some of them are posted on the web. The cookbook is excellent.
DeleteJust gorgeous, Diane! Your photos are so vibrant! I was going to use dill as a garnish, too...LOL, but I saw the last of my chive blossoms in the garden and couldn't resist!

DeleteWOW! You guys really really liked them! :) they look pretty enough and I will have to take your word for it that they are tasty with all those toppings... although I imagine they are tastier with those toppings instead of maple syrup like I used!

ReplyDeleteSavory is what came to my mind too when I prepared the corn pancakes and I adore a "fishy version" - in my humble opinion, the little pancakes pair perfectly well with salmon and crème fraîche.

DeleteIt's actually hard for me to imagine these as a sweet dish. I served mine with shrimp and grits and I could easily see that in bite sized portions. Beautiful picture.

ReplyDeleteI also topped with creme fraiche and smoked salmon, which was a perfect appetizer. Your mini zucchini is so pretty! I hadn't thought to extended this the core of a meal, but your ideas have caused my mind to start thinking of that, especially as fresh corn season is nearly upon us. Definitely something with a Southwest influence on top.

DeleteI love your photo with the little eensy zucchini! I'm trying to get better at taking photos but I think I have a long way to go. I really loved these little pancakes but I didn't do anything revolutionary with them - just some good ol' maple syrup. I love the idea of a Southwest black bean and corn mix over them with lots of cilantro. Yum!

DeleteDiane, First, thank you for your comment about Michael. Anyone who loved him could not have wished him to endure life like this one more minute but it's bumpy around here right now. I loved your plated corn pancake in your opening photo. It looked good enough to eat! But, four of those little guys, a little much!!! I'm delighted your daughter liked the strawberry/whipped cream version. The sweet taste was delicious, one or two, even stacked, at the end of a meal. I see this as a simple little savory nibble or sweet snack, just as you do.
