| Pancetta in a Butter Sauce |
I had a foodie weekend in NYC with my daughter not too long ago that I will write about soon. For lunch one day we ate in Eatlay and I had this dish. I loved the simplicity of it, so I had to figure out how to duplicate it. Simple things are not always simple to make the first time... it took a few trys to get the flavors balanced.
Pancetta in a Butter Sauce

Preparation time: 20 minutes Serves: 4 - 6
Ingredients:
8 oz of Pancetta diced
1 stick of unsalted butter
1/2 cup of grated Parmesan cheese
16 oz of tagliatelle paste (Schar gluten-free)
Coarsely ground black pepper
Note: You can substitute bacon for pancetta and medium egg noodles for tagliatelle.
Directions:
1) Get pasta water boiling with 2 tablespoons of salt in it.
2) While the water is boiling, fry the pancetta in a large skillet and put aside in a bowl.
3) Drain the skillet of pancetta grease then melt the butter in it.
4) When the pasta is cooked add it to the melted butter and toss it with the pancetta and cheese and some pepper.
Note: Do not use salted butter or add salt to this dish. The pancetta and parmesan have enough salt in them. Also, do not leave the bacon grease in the pan. I made this mistake and it was too oily and heavy mixed with the butter.

I can see garlic being good... but try it first with just the pepper. What impressed me when I had this in the restaurant was the pleasure of the simple ingredients.
