I'm Sweet on Sweet Potatoes: Healthy Eating

I am sweet on sweet potatoes... how about you? I loved them baked, in soups, fried, and as chips. I can't get enough of them this time of year. Funny, they are a seasonal vegetable, and they are chock full of vitamin A which helps your immune system. I wonder if loading up on this wonderfully orange tuber before flu season helps you fight off colds and flu? They also contain a lot of vitamin C and iron along with fiber... besides that they are so versatile and tasty.

  1. Sweet Potato Chili? Sounds interesting. I'm going to have to try that one.

    My favorite way to eat sweet potatoes is to bake then top with butter, salt, a hint of brown sugar, and a dash of chipotle powder. The dash of chipotle gives it a rich smoky flavor.

  5. That curried sweet potato soup looks good. I made a curried pumpkin stew a week ago that turned out well. We plan to buy sweet potatoes soon so thanks for the ideas!

  9. Nom, nom, nom. These all look so good! I am the same way about Butternut squash ("Hi, my name is Claire and I might love Butternut Squash too much"). I have some recipes coming up featuring just that. And Pierogis have been a holiday tradition since I was little so they are a staple around here during the holidays!

    1. I have a mild addiction to pumpkins. It isn't even Thanksgiving yet and my family may be overdosed on: pumpkin muffins, pumpkin cake, pumpkin pudding... etc...

  12. Thank you for the wonderful supply of sweet potato recipes, Diane. I also am sweet on those ugly little tubers. They are great for lunch or dinner, I just throw one or two in the oven, done. In fact today I am having a sweet potato with feta, sundried tomatoes and oily black olives for lunch. Obviously, thinking of Idaho and Provence!!!! Oh, Diane, I hope you and your family have a wonderful Thanksgiving. I know many of those in your region are questioning what there is to give thanks for this year but Americans do bounce back. We just do.

    1. New Yorkers pride themselves on being tough and folks from New Jeresy have to be tougher because they don't want to be out done by the New Yorkers... we will carry on. The support from the rest of the country has been wonderful too.
