My kids ask me, "What's your favorite vegetable?" My answer is always: ONIONS.
"That's not a vegetable...they're just something people put in things."
Their answer reaffirms my belief that onions are a truly under appreciated vegetable. Yeah, they are something people put into thing.... they are something that people put into most recipes.
Could you image stews and soups without onions? Onions versatility and necessity are enormous.
And you probably didn't know that they are extremely nutritious too: filled with sulfur which is important for your brain and nervous system, along with being one of the only sources of Quercitin, which has many health benefits... one of the most important being antiviral and anti-inflammatory properties that are so critical for protecting you from illness in the winter.
So, go easy on the onion rings, but other wise indulge all you want in low calorie, highly nutritious: onions.

Friday: Cod with Mustard Caper Sauce, Roasted Potatoes and Spinach














I think that next to tomatoes, onions are my favorite vegetable. We eat up to 10 onions a week. I saute a medium onion to go with my eggs 2 or three days a week. We eat roasted roots and tubers with two or three onions in them a couple of times a week. Great stuff.

DeleteOnions really are so good! Mark hates them though, he'll actually pick them out of salads and burgers since they're not cooked. I'm always hiding onions in our soups though.
ReplyDeleteThere are plenty of people that hate onions, though I think they don't even notice them in a lot of things. So I guess you have to get your onion fix out of the house. I always love when their is a choice to get onion rings instead of fries.

DeleteI LOVE onions!!! But, my kids feel the same way and they won't eat them if they know they're in a dish.

DeleteOnions are one of my favorites. Raw onion has started to bother my stomach so I'll have to stick with cooked. I really like your blog.
ReplyDeleteThanks so much... yeah, I can't eat too many raw. I like pickled ones on a burger they seem to be easier on my stomach and my breath.
DeleteOnions are amazing and delicious! I like to buy 6-9 lbs every two weeks. We try to eat them raw when we can...the mild Vidalias or sweet yellows are so good. Thanks for the recipes; they look really good!
