Ok, wasn't it just St. Patrick's Day... now Easter is next week. Isn't there usually a little more time between these two holidays?
Having been raised Italian-American dessert was never a given after dinner. Italians traditionally eat a little bit of fruit and cheese after a meal. Which is super healthy and definitely helps to prevent diabetes... which Italians are very prone to getting. But, Easter has always meant pies to me...three very special and distinctly Italian pies: Ricotta Pie, Wheat Pie and my favorite Rice Pie.
My family has always been very focused on making Pizzagaine for Easter which is a savory pie, other family members would make the dessert pies, so I don't have a family recipe to share with you. But let me assure you this is a delicious version of this classic Italian pie. If you like rice pudding you will love this pie.
Because the filling is cheese and rice it is easy to make it gluten-free by changing the flour in the crust to gluten free flour. I use cup 4 cup baking flour. We had some left over pie dough and filling so my daughter and I made these mini pies. You might want to make all of yours this way.

My family does splurge on sweet fruit pies for dessert for Easter, but you're right, dessert was not a big player on the table in my Italian family either. My German husband was raised exactly opposite, so he eats the sweets and I stick to the pasta! Have a wonderful Easter!

I think you might like it. Just make sure you use Arborio rice. It doesn't work with any other kind.

ReplyDeleteIn the US I think they eat more sweets, especially pastries. But my grandparents were definitely old country, just fruit and cheese. Truly healthy.
