It is the time of year to lounge by a pool or have a picnic by a quiet pond. It is not a time to spend hours preparing a meal. Fortunately the abundance of fresh fruits and vegetables in the summer means meals don't need a lot of preparation to be tasty. The following are quick, healthy dishes that you can substitute any vegetables you want into the mix, it will still taste wonderful.
