Smoked Salmon w/ Sour Cream over Swiss Chard Pancake #Foodie Friday

Yum
Smoked Salmon w/ Sour Cream over Swiss Chard Pancake

A seriously intense heat wave has just ended here in New York, so even with the air conditioning on in my house I have been trying to use the stove as little as possible... but at the same time everything is bursting in folks gardens...what to do? Make savory pancakes using this recipe: Swiss Chard Pancakes. The great thing about this recipe is you can substitute any green vegetable for the Swiss Chard, so if you have lots of spinach, or kale go right ahead and use it. I topped this with no cook Smoked Salmon which isn't just for bagels in my house. A nice dollop of sour cream and chives makes this a complete warm weather meal.

We are so lucky to have wild blackberries growing all over the place. Love the idea of mixing them with pecans and figs.

Sam explains how not to dry out your pork on the grill. This salsa has the great contrasting flavors of seasonal peaches and basil

I love recipes with a story and this has a sweet one about using your finery. It is also a wonderfully light dessert perfect for the summer.

  3. What a lovely meal for a warm summer day or evening, Diane! I like that the pancakes help use up the garden's bounty too. Thank you so much for featuring my Raspberry and Rose Jelly and Cream today :) This week I've shared my Quick and Easy Peach and Raspberry Cobbler. It's as easy to whip up as muffins. Have a lovely weekend!

    1. Well, if you hide the chard in a pancake I assure you it will be much easier to eat.

  6. I've read about the heat wave that swept the north and was concerned for everyone. We're more prepared for the heat in the south. The hottest I've ever been in my life was one year in June visiting NYC.

Thank you for including my pork with peach salsa. I am honored. Thanks so much for hosting each week Diane and I hope you have a lovely weekend.

    1. Thank you for your concern. Yes, I especially worry about elderly people without AC. A lot of people don't have AC because some summers you can get away with out needing more than a few times. Well, it is pleasant now in NY until the next weather event. Thank you again for your great recipes.

  20. Hi Diane,
Thank you for your kind invitation to share here on your wonderful Friday blog get-together! I've been so super busy this summer and apologize for my absence (I've only posted twice in the entire month of July!). I feel for your torture of heat on this east coast where we both live, but man, we're drowning in rain down here in SC and my garden is nearly dead . . . just another reminder that Mother Nature is always the 'boss'. I love each and every one of your featured recipes for this week . . . truly wonderful food bloggers as well, deserving the honor! Wish I had some Swiss chard right now , but maybe I can find some in the fresh market to make your outstanding pancakes!

    Happy summer, Diane!

    xoxo

It is so wonderful to see you here no matter how often you can make it. So sorry to hear about you having so much rain. We started out dry this summer but have had a good balance of wet and dry. Great weather for tomatoes.
