A seriously intense heat wave has just ended here in New York, so even with the air conditioning on in my house I have been trying to use the stove as little as possible... but at the same time everything is bursting in folks gardens...what to do? Make savory pancakes using this recipe: Swiss Chard Pancakes. The great thing about this recipe is you can substitute any green vegetable for the Swiss Chard, so if you have lots of spinach, or kale go right ahead and use it. I topped this with no cook Smoked Salmon which isn't just for bagels in my house. A nice dollop of sour cream and chives makes this a complete warm weather meal.

Thank you for your concern. Yes, I especially worry about elderly people without AC. A lot of people don't have AC because some summers you can get away with out needing more than a few times. Well, it is pleasant now in NY until the next weather event. Thank you again for your great recipes.

I've been so super busy this summer and apologize for my absence (I've only posted twice in the entire month of July!). I feel for your torture of heat on this east coast where we both live, but man, we're drowning in rain down here in SC and my garden is nearly dead . . . just another reminder that Mother Nature is always the 'boss'.
