Eggplant Recipes: A Meaty Low Calorie Vegetable #Healthy Eating #Weekly Menu Plan

Yum
eggplant: Simple Living and Eating

Eggplant is a good source of minerals, fiber, and antioxidants. It is low in calories, yet very filling. Eggplant like mushrooms have a meaty texture which makes it an excellent meat substitute in may recipes. But please note it does not have the protein or B vitamins that are found in meat. If you are a vegetarian soy is a much better substitute for meat nutritionally.

Here are some of my favorite eggplant recipes... enjoy the harvest of this delicious Mediterranean vegetable.
