Eggplant is a good source of minerals, fiber, and antioxidants. It is low in calories, yet very filling. Eggplant like mushrooms have a meaty texture which makes it an excellent meat substitute in may recipes. But please note it does not have the protein or B vitamins that are found in meat. If you are a vegetarian soy is a much better substitute for meat nutritionally.
