Tzatziki Greek Appetizer Platter

Greek Tzatziki for French Friday? It may sound strange to you, but I immediately connect Greek food with Paris. Many of the times I visited this enchanted city I could barely afford to pay for a hotel never mind food to eat. When I was in my teens and early 20's I  subsisted on a baguette for breakfast, a Nutella crepe from a street vendor for lunch, and dinner occasionally was at a French bistro... but more frequently it was at a Greek restaurant in the Latin Quarter

To those of you not family with Paris the Latin Quarter  is were the Sorbonne is located... thus the cheap college section of town. I didn't go to this arrondissement of Paris the last time I visited three years ago,  but it was always filled with good inexpensive Greek restaurants whose foods are so fresh that the decor of these places consists mostly of garlic, herbs, vegetables, cheeses and meats all curing right in the dining area.

Tzatziki has always been one of my favorite Greek condiments. I found it funny that Dorie suggested you use it as a dip for a crudite... I mean it would work well for this, but I have always used it as a sauce on Shish kabobs and Gyros... not celery and carrots.

I guess all foods can be tamed,  but not this evening... 

the Balches dolloped big tablespoons of Dorie's flavorful Tzatziki recipe all over beef kebabs. We did dip a few pita chips in it while waiting for our meat to cook. We had a full out Greek night nibbling on a platter of stuffed grape leaves, almonds, dried apricots, figs, and of course spicy peppers and olives. 

My family really loved the fresh mint and dill along with the garlic, lemon and cucumbers in the Tzatziki. The flavor was really bright and zesty... we will make Dorie's Tzatziki recipe again, the next time we grill kebabs.

A fresh ripe peach is truly the greatest treat of summer, so sweet and the texture to me is perfect. This last year was the first time I cooked and grilled peaches and I was floored by the complex flavor they develop. Smoked Salmon w/ Sour Cream over Swiss Chard Pancake


A seriously intense heat wave has just ended here in New York, so even with the air conditioning on in my house I have been trying to use the stove as little as possible... but at the same time everything is bursting in folks gardens...what to do? Make savory pancakes using this recipe: Swiss Chard Pancakes. The great thing about this recipe is you can substitute any green vegetable for the Swiss Chard, so if you have lots of spinach, or kale go right ahead and use it. I topped this with no cook Smoked Salmon which isn't just for bagels in my house. A nice dollop of sour cream and chives makes this a complete warm weather meal.

Dieter's Tarine: Tomato Cucumber Salad over Cottage Cheese


I would never eat cottage cheese for fear of being labled, "A Dieter". I've over heard the catty comments about cottage cheese eaters. 

"I think she's on a diet, well it's about time." 

or 

"SHE really thinks she needs to loss weight...she's practically anorexic."

We are really extremist in the US about diets... I mean look what is popular right now, on one end you have the folks who are wrapping everything in bacon and then on the other side you have people completely avoiding meat, dairy, gluten etc...

I think we tend to decide that we are either on or off a diet, so we are over eating or watching and counting the calories of every morsel that goes into our mouth.

The Italians I grew up with never deprived themselves of any food. Nothing was off limits, but the ones who wanted to "keep their figure" as they would say would just eat a slice of a cannoli, a half a plate of pasta... and fill up on salad or the other wonderful vegetables that were at the table.

I have always embraced this way of eating because I find that as soon as I say I am not going to eat a certain food; I begin to crave it. Instead, now if I feel I ate a little more than I should have, I go for a walk to burn it off.


Say for instance you are going out for a big meal in the evening, a French person would eat a lunch like this Dieter's Tartine. I couldn't find Fromage Blanc so I mixed some low-fat cottage cheese and sour cream together, and put it over toasted multi-grain bread. I topped it with Dorie's flavorful cucumber and tomato salad. This lunch was completely satisfying and tasty. And it was low calorie. I didn't even eat a serving of low-fat cottage cheese which is 1/2 cup and is only 100 CALORIES.

I often find that for some reason when people make "diet food" they make it bland. Herbs don't add calories, cheese and butter add calories. You can make something flavorful by seasoning it well, instead of adding fat to it. This Dieter's Tartine has the wonderfully tasty Herbes de Provence herb blend along with fresh chives to kick up the tomatos and cucumber. I didn't even notice that the salad doesn't contain any oil!

Both my husband and I really enjoyed this sandwich. My husband couldn't have cared less that it was low calorie, what he liked about it was that it was bright and light for a summer day...

So Bon Appetit without guilt on this one!
