Beet Greens & Onion Pasta: The Sweetest Vegetable of the Season #Foodie Friday

Beet Greens Pasta: Simple Living and Eating


It's getting chiller outside and the farm stands are starting to sell more root vegetables. If you can pick up some fresh beets you won't be disappointed. Super healthy and sooo sooo sweet. My kids gobbled them up when they were babies.

 Beets are nature's candy. I like cooking up the greens and serving the sweet roasted or boiled beets along with their more bitter greens. It is a really flavor balanced meal that is simple to make. I made a version of Dorie Greenspan's Lime and Honey Beet Salad with this dish. It was a wonderful complement to the pasta dish.


Beet Greens Pasta: Simple Living and Eating


Beet Greens & Onion Pasta

preparation time: 10 minutes                           serves: 4 - 6

Ingredients:

1/2 cup of Extra Virgin Olive Oil (EVOO)
1 onion chopped
1 bunch of beet greens cleaned, chopped and stems removed
1/2 softened golden raisins
1 tablespoon apple cider vinegar
1/4 cup of pine nuts
1/4 grated parmesan cheese
1 pound of spaghetti


Directions:

1) Bring a large sauce pan of water with 2 tablespoons of salt in it to a boil for the pasta.

2) While the water is coming to a boil. Put your raisins in a measuring cup and cover them with water. Heat them in the microwave on high for 1 minute. Let them sit and moisten in the water.

3) Heat a large skillet on medium high heat and add the EVOO to it. Saute the onions. When they begin to get soft add the beet greens. Saute until they wilt.

4) When vegetables are cook splash them with the vinegar and a little salt and pepper. Mix well.

5) When the pasta is ready mix it into the pan with the vegetables and add the raisins (drain the water first) and parmesan cheese. Mix well. You may need to add a little more EVOO. Taste test before serving with a side of beet salad.

Marie-Helene's Apple Cake #French Fridays with Dorie

The rest of the Dorista's made a wonderful apple rice pudding that you really should check out. My family and myself included are not big fans of rice pudding, even rice pudding covered in apples and carmel, so instead I made a French Friday recipe that was baked before I joined the group.

This apple cake is tremedous. I love apples, but unlike the rest of my family I find pies to be too sweet. Too much fruit,.. even smothered with ice cream or whipped cream. A few bites and I'm done.

This cake... was very different. Not overly sweet, the butter flavor balanced the apples well and the splash of dark rum gave it a depth of flavor that made it extra special.

The recipe is simple enough that I was actually going to make it myself, but my baker daughter was bored so she took on the task.

It has been almost a year that my husband, with a little help from the kids, has been building a wood strip canoe.

In previous updates I've mentioned that this has been a life long goal. My husband's father built a canoe in his basement when he was a teenager... it proved to be difficult to get out read here: Building a Canoe. What's Your Dream Project?

The boat went from this frame that they built to.....

Well, between my husband's work, which can entail a bit of traveling, and being a very active Boy Scout Leader, which takes up most of his weekends, he has finally finished putting the strips on the canoe. Now all that is left if sanding (a major time consuming job) and sealing (a bit of an undertaking too)...

...but all worth it to have a dream come true.

Lots of sweat went into this boat. 

So remember to shut off your TV, unplug the computer and your phone, and spend some simple living time doing something with your hands.

Spending hours in front of a screen will never give you the sense of accomplishment that comes with creating something.

The Secrets of the Mediterranean Diet #Healthy Eating #Weekly Menu Plan

I'm going to let you in on the secret to longevity and happiness...moderation.

Don't deny yourself anything.

But don't over indulge.

It's a delicate balance to maintain, but it is possible.

Have a dessert once a week.

 Eat meat, but in small portions, and not everyday.

Put cheese on some of your dishes... but don't smother your food with cheese. (Way too many calories and fat.)

Eat fruits and/or vegetables at every meal.

Drink alcohol, but never more than 2 or 3 drinks in an evening, and on most days only 1 glass.

Eat bread and pasta, but try to have mostly whole wheat and a small portion.

If you weigh yourself  daily and exercise a little everyday you can catch weight gain before it gets out of hand.

Remember it is what you do daily, not weekly or monthly that keeps you happy and healthy.

Sunday: Eggplant Parmesan, Rustic Bread, & Salad


Tuesday: Trader Joe's Mahi Mahi Burgers, Remoulade  Sauce and Fresh Pickles 


Thursday: Chicken Provence with Quinoa and Green Beans

Saturday: Grilled Kielbasa, Corn on the Cob, and Salad
