The phone rings… "Hey, long time no see I'm having a little lunch at my house for Valentine's Day tomorrow want to join us?" "Sure, can I bring anything?" "Oh, surprise us."
The surprise is you have no eggs in the fridge, no chocolate chips…and no time to go to the grocery store.
Still have a cup of coffee left from the morning… you're in business. You can make, "Emergency Chocolate Cake."

I made a Valentine's version by using two heart shaped pans and spreading some raspberry jam in the middle, that I happened to have on hand.
This is a great cake recipe to keep at the ready, because if you do any baking you are likely to have most of the ingredients in your pantry. My mom told me her mother made this cake during World War II when fresh ingredients were always in short supply... it has quite a long history.
So, don't sweat the last minute invitations… go have fun and Happy Valentine's Day!!!
