Got winter doldrums: I do big time! I am in a cooking rut since nothing seems to be in season right now… This is a time of year to daydream about warm exotic places… being focused on the Mediterranean my thoughts brought me to Morocco. 

I took a Moroccan cooking class last year at Williams Sonoma and I have been determined to try the interesting ingredients I learned about. One was preserved lemons… I happen to see a jar in a gourmet shop, so I bought it. Now I am trying to figure out what dishes to make.

Well, the results seem to be endless. I wanted to share them with you, and to also let you know that it is pretty simple to preserve your own lemons. They make a nice gift if you give them to someone with a recipe attached.

I love them… they are a jar of sunshine!

Wednesday: Chicken Parmesan with Pasta and Salad (using Trader Joe's Breaded Chicken, topping with mozzarella and tomato sauce)


Thursday: Philly Cheese Steak: Mushrooms, Onions & Swiss Cheese (using Steakums)

Friday: Chicken Chowder with Chipotle & Corn Bread

Saturday: Shrimp Etoufee over rice with salad.

    1. They are pretty new to me also and I thought I knew about Mediterranean cooking, but Italians don't really use them. Hope you give them a try.

  3. Diane, I just bought a bag of Meyer lemons from Trader Joe’s with the intention of preserving them. I had saved a recipe I saw last year.Some of those dishes look amazing! Interesting post! I really can’t wait till spring!

    1. I didn't make my own though you may need a better recipe. I know another blogger who make her own if you want her recipe. I think I bought mine at Ridgefield Organics. I have also seen them at the Shoprite in Danbury.

      For us it is sunshine in a jar... it has been so cold. I love adding citrus into dishes in the winter. It brightens all the heavy food up a bit.
