I had my fill of chicken wings, nachos, and various other tasty but heavy and fatten foods yesterday. It's  fun once a year to watch the Super Bowl and not think about your diet. 

Now it's time for a reality check.. yes, my scale says I need to get back to healthy eating, especially healthy greens. They are high in dietary fiber, iron, vitamin A and C. They are also low in calories. A half of a cup of Swiss Chard, one of my favorites, contains only 15 calories…

So listen to your mamma, "EAT YOUR GREENS."

Swiss Chard with Golden Raisins

preparation 10 minutes                                serves: 4


1 bunch of swiss chard leaves cut off from stems and chopped
2 tablespoons of butter
1/4 of golden raisins 
1 teaspoon balsamic vinegar
1 onion halved and sliced thin
salt and pepper


1) Cover raisins with boiling water and let sit for at least 2 minutes.

2) Melt butter in a medium size sauce pan. Saute the onions until they wilt.

3) Add swiss chard to the pan and pour the raisins and half of their water into the pan. Salt and pepper. 

4) When the swiss chard wilts drizzle the balsamic vinegar over it. Mix and serve.

Sunday: Super Bowl Sunday: nachos, Buffalo chicken wings with Blue Cheese Dipping Sauce, and homemade pretzels.

Meatless Monday: Lentil soup and rustic bread

Tuesday: Boeuf a la Ficelle (Beef on a String)

Wednesday: Spinach Lorraine Skillet Strata 

Thursday: Pan Grilled Scallops with Dilled Potatoes

Friday: Sushi night out

Saturday: Leftovers

  2. Hi Diane. Well i made that Lasagna with the recipe you posted . Did a little adjustment to it added tangerines ,fresh garlic,fried bacon first,and a couple green onions.Then the spinach added the spice and fresh sweet basil Made a white sauce. Used EX- sharp cheddar and ricotta cheese. Was so good . Thanks for the inspiration.

  5. Dear Diane, I agree completely. It is fun to forget and enjoy the food for the special events but my scale says it is time to get back to basics too.
