Warm Corn Salad with Huevo Frito #Foodie Friday

My daughter has been learning about healthy eating this year in her Home Economics class. I have always considered myself to be a good eater. I eat very little red meat and cheese, but since I have been involved in a French cooking group I have been making more beef and pork. 

My daughter requested that we eat more vegetarian meals. My husband couldn't have been happier, but my son... not so much. He is growing like a bean pole and is craving protein. 

This dish is a compromise. You can eat it on it's own, and it is a complete meal because the beans are high in protein, but if you want a little more protein and to me a lot more flavor, add a fried egg and let the yolk run through this delicious corn salad.

You can even sprinkle a little cheddar cheese on top of it, if you feel the need for a little more fat to feel satisfied.

I love the flexibility and simplicity of this meal. Most  likely you have most of the ingredients for it already on hand.

Warm Corn Salad with Huevo Frito

preparation time: 15 minutes                          serves: 4


Ingredients: 

1 10-12 ounce bag of frozen corn
1 15 ounce can of black beans drained and rinsed
1 onion chopped
1 clove of garlic chopped
2 tablespoons of Extra Virgin Olive Oil (EVOO)
1 teaspoon cayenne pepper
1 tablespoon of butter
salt and pepper to taste
1/4 cup of salsa
1 red pepper chopped
1 tablespoon of lime juice or more
1 fried egg per person
optional: shredded cheddar cheese

Directions:

1) Melt EVOO and butter in a large skillet. Saute the onion, pepper, garlic with cayenne pepper, salt and pepper until vegetables soften.  

2) Add corn, beans, and salsa heat through. Mix in lime juice. 

3) In a different skillet fry one egg over easy per person.

4) Scoop corn salad into bowls and top with an egg. Sprinkle some cheddar cheese on top too if you like.

    What a great meal in that bowl, that looks delicious! I am glad to make this tonight, we have tornado's all around us, people have been getting hail the size of softballs, it takes their car window out. Hope your weather is much better, have a great weekend and thanks for the party!
