Endive Anchovy Nicoise Salad

preparation 5 minutes                               serving: 1


1 red Belgian Endive leaves peeled
6 anchovies
1 hard boiled egg sliced
12 tiny potatoes whole or 6 small cut in half
12 green beans
1 teaspoon of capers
Squeeze of lemon juice
Drizzle of Extra Virgin Olive Oil (EVOO)
salt and pepper


1) Arrange endive leaves in a circle.

2) Put potatoes in the center. Top with anchovies, eggs, green beans and capers.

3) Drizzle EVOO and lemon juice over salad, add salt and pepper.

    But I will say "hold the anchovy" as I'm a vegetarian

    1. I understand... as long as you eat eggs and capers you'll get the effect of a nicoise salad.
