The summer heat makes me both thirsty and sleepy. It is the time of year to sip some iced green tea while I work on my blog posts or catch up on Facebook with old dear friends.
This was a true "refrigerator clean out" inspiration. I had left over rice, eggs, zucchini and ALWAYS, ALWAYS, a bottle of Sriracha. This is the lightest risotto I've ever eaten, perfect for summer. It is made with fresh seasonal vegetables baby carrots, fava beans, and fresh parsley with Parmesan cheese.

The first day of summer is not officially until June 21st this year. I keep hearing about school being out, and the warm weather people are enjoying in parts of the U.S.... but here in New York, we are in school until the end of June and it is cool, rainy Spring.
