Memorial Day last Monday ushered in the beginning of summer. My kids were in parades in two different towns, plus we had a BBQ at our pool club to go to in the evening.

It is a fun time of year, but it can be hectic. Not only do you have more events and activities to go to, you also have projects that couldn't get done when the weather was cooler... like fiber glassing your canoe.

I sampled their Passion XO Pink, which they provided a wonderful cocktail recipe for.. of course, the day was busier than I planned on it being, and I didn't get a chance to buy all of the ingredients to make the cocktail. This didn't matter. I just mixed Passion XO Pink with seltzer and I had a delicious and refreshing drink on the first hot day of the summer season.

Pink Sparkler
1 bottle Passion XO Pink
½ bottle of sparkling wine
6 oz ginger liquor
8 oz cranberry juice
5 oz lime juice
2 oz orange juice
Garnish: orange wheels, lime wheels

Pour ingredients for each punch into serving bowls with 5 cups of ice. Serve over fresh ice and enjoy these three unique vibrant refreshing punches.

Sunday: Bouillabaisse with homemade sourdough bread. 

Meatless Monday: Frittata with CSA delivery. 

Tuesday: Chicken Tacos with Trader Joe's Taco Mix, Guacamole and Sour Cream 

Wednesday: Red Lentil Dal with Brown Basmatic Rice and Palak Paneer (Indian Cheese Spinach dish)


Friday: Chile Pasta with Trader Joe's Green Olive Tapenade and a Green Salad

Saturday: Leftovers
