Slow Cooker Chicken in Tomatoes

preparation 10 minutes serves: 4 to 6
Ingredients:
1 1/2 to 2 pounds of skinless, boneless chicken (light or/both dark meat)
8 ounces of crimini mushrooms, chopped stems removed
1 large onion chopped
6 potatoes peeled and quartered
1 28 ounce can of Dei Fratelli Chopped Italian Tomatoes Herbs & Olive Oil
1/2 cup of white wine
1/2 cup of chicken broth
1 teaspoon of salt
1 teaspoon of pepper
1/8 teaspoon of cayenne pepper
2 tablespoons of corn starch
Directions:
1) In a slow cooker layer the following ingredients in this order: onions, potatoes, chicken, and topped with mushrooms.
2) Whisk together: white wine, chicken broth, salt and pepper, cayenne, and corn starch. Mix this with the Chopped Tomatoes.
3) Pour the sauce over the ingredients in the crockpot and cook on low for 4 to 6 hours.
Great served with some crusty Italian Garlic Bread.

Meatless Monday: Broccoli Quiche with Tomato Salad
Tuesday: Scallop with Double Carrots and Quinoa
Wednesday: Simple Black Bean Enchiladas with Sour Cream and Guacamole
Thursday: Belgium Mussels and French Fries
Friday: Beef Stir Fry with Jasmine Rice
Saturday: Leftovers
I love how simple this dish is Diane! I love their tomatoes, unfortunately my local grocery store stopped selling them. :(
