Sunday: Fresh Tuna Burgers with Ginger & Cilantro, Cole Slaw, Pickles and Brioche Rolls (making the burgers with canned tuna)
Meatless Monday: Persian-Style Carrots & Black-eyed Peas with Persian Rice and Swiss Chard
Tuesday: Lemon Butter Chicken with Mashed Potatoes
Wednesday: Shrimp Scampi with Saffron Rice and Broccoli
Thursday: Veal Marengo (made with beef) & Homemade Rustic Bread
Friday: Quiche with leftover vegetables and a Green Salad
Saturday: Leftovers
