May is National Salad month and Driscoll’s and California Endive Farms are challenging bloggers to create fun salads using berries and endives. They also have excellent recipes to choose from on their websites.
I found some wonderful fresh ricotta in my farmer’s market and knew that it would bring the endives and berries together in a delicious way. I was right. You can try this recipe with any fresh cheese. I think cottage cheese would work well too… enjoy eating salads this month!
