Endive Anchovy Nicoise Salad

Ingredients:
 
1 red Belgian Endive leaves peeled
6 anchovies
1 hard boiled egg sliced
12 tiny potatoes whole or 6 small cut in half
12 green beans
1 teaspoon of capers
Squeeze of lemon juice
Drizzle of Extra Virgin Olive Oil (EVOO)
salt and pepper
Directions:
 
1) Arrange endive leaves in a circle.
2) Put potatoes in the center. Top with anchovies, eggs, green beans and capers.
3) Drizzle EVOO and lemon juice over salad, add salt and pepper.
