Endive Anchovy Nicoise Salad #Healthy Eating #Weekly Menu Plan

“Hold the Anchovies.”

Has always been a favorite phrase of people who do not know how anchovies can take a dish to a new level of taste. You see anchovies are an umami , a natural flavor enhancer. They don’t always have to be in the foreground of a dish as in this salad. They can be quietly lurking in the background of say a Brushetta… just enhancing the flavor of the tomatoes and the basil.

But if you are like me and like the taste of anchovies or you are on the fence about their flavor. Wild Planet’s White Anchovies are a good choice to buy. First of all the company supports sustainable fishing practices which makes them environmentally responsible, and you want to support a company who cares about the future of the fishing industry.

Secondly their anchovies aren’t pungent like other brands. The flavor is clean and mild… which is perfect for a Nicoise salad.

On top of the great flavor you are getting a major dose of nutrition; anchovies are an extremely potent source of Omega 3 (an average of 1,240mg EPA and 770mg DHA Omega 3 per can), plus they contain calcium, iron, niacin and selenium.
